Pitted Apricot with Sweetened Vanilla Ricotta

Breakfast on the weekend. I loathe making it. Why? Because it can be time consuming and I don’t want to do anything on a Saturday morning. Usually I like to throw some fresh fruit into some sweetened ricotta cheese for a quick breakfast.

Fruit for breakfast provides my brain with the illusion that I am eating healthy. So that is always a plus.

I really enjoy sweetened ricotta, it’s not as harsh as cream cheese and it has a great mild flavor. It works well with apricot, due to the fact that apricot has a sour/sweet flavor that can be harsh for some by itself. When paired with sweetened ricotta and honey you have a nice little pairing on your hands.

This dish can be used for a healthier dessert as well.

Recipe

Ingredients

2 Apricots

1/4 Cup Ricotta Cheese

1 Tbsp. Honey

2 Tsp. Sugar

1 Tsp. Fresh Ground Vanilla

Method

First cut your apricots in halves. Now take your ricotta, sugar, and vanilla and mix them together. The ricotta mixture should have a nice sweet (but not too sweet!) flavor. Put little mounds onto your apricots and drizzle with the honey.
