Ricotta Cheddar & Sausage Frittata

I love making Frittatas. FYI though, I hate spelling Frittata! So many “Ts”!

They are basically like big egg pies or baked omlettes. You can add all sorts of meats to these frittatas to really make these into more of a meal. These are so easy and you can just dump a bunch of ingredients into the mixture, and you are almost guaranteed to have a delicious dish. We’ve touched on them before.

The frittata keeps well, so you can have breakfast for at least three days.

Recipe

Ingredients

8 Eggs

1/2 Cup of Milk

1/8 Cup of Flour

1 Cup of Cheddar Cheese

3 Tbsp. of Whole Milk Ricotta Cheese

1 Polish Sausage Link (Cut into 1/4 inch circles)

1/2 Cup of Green Onions

1/4 Cup of Spinach (Washed and fully dried)

Method

Poach the sausage, once the sausage is done, cook it in a skillet for 5 minutes so the meat caramelizes. Once it’s done, dice the sausage into 1/4 inch circles.

Beat your eggs together, then add your flour and milk. Beat the mixture until the there are no lumps from the flour. Grease a skillet with butter or bacon fat ( I used bacon fat).

Pre-heat your oven to 350F.

Pour your egg mixture into the greased skillet. Next, add your spinach and sausage. Now add your cheddar cheese, ricotta, and green onions.

Bake in the oven for 20 minutes.
