I am no expert on Mediterranean cooking. Israeli/Arab cuisine is very foreign to me despite it sharing a lot of similarities with Persian cooking. I adapted this from Chocolate & Zucchini.
I had way too much cooked chickpeas on my hand after I made some hummus. So I wanted to make something that was healthy and tasty. Falafel came to mind.
This turned out really good and was so easy to make. Eat it with some lettuce, hummus, and some Greek yogurt.

Ingredients
2 Cups Cooked Chickpeas
2 Cloves Crushed Garlic
3 Tbsp. Coconut Flour
2 Tbsp. Parsley Flakes
1 Tbsp. Cumin
1 Tbsp. Salt
1 Tbsp. Lemon Juice
1 Tbsp. Olive Oil
Method
Add all of the ingredients into the food processor, make sure you do not make them too mushy. Just process it enough to crush them up. Then form them into little balls and place onto a greased sheet. Preheat your oven to 350F. Brush with olive oil and bake until golden brown all over.
