Chorizo Egg Muffin
Me and the Mrs. don’t have a lot of time to eat breakfast in the mornings. In order for us to get a filling breakfast that’s also not going to sabotage our nutrition for the whole day, we make our breakfast ahead of time.
That’s where the Chorizo Egg Muffin comes in, basically it’s like a mini quiche without the crust. It’s pretty satisfying and if you make a batch of 6 they keep for about three days.
I like using chorizo in these muffins because they had a great flavor kick to the egg muffins. It’s basically like a gooey cheesy sausage bite.
Recipe- Chorizo Egg Muffin
1 oz Chorizo (in each)
.5 oz of Mexican Cheese Blend (in each one)
Diced Red Peppers
