Pesto Mac & Feta with Fried Onions

Macaroni and cheese of any variety is pretty damn delicious and ALMOST impossible to F up. Copious amounts of cheese, cream, and butter alongside our friend Mr. Pasta will always be tasty.

Mac & Feta takes me back to the days, where I yearned for Easy Mac but got this instead. Growing up, Easy Mac was the apex of American Food for me. I yearned for it, but I always got Mac & Feta. But let’s be honest, Mac & Feta rules. (We didn’t have a microwave till I was 14, so microwavable anything was the forbidden fruit)

I touched in a previous blog about Feta and its variations. Feta is great on everything, Iranians will spread it on bread and eat it with Cucumbers.

I decided to dress up this Mac & Feta with some pesto and heavy cream. I used the pesto because, I really enjoy the flavor it brings to pasta. And I used cream, because my arteries were screaming to be clogged. La Pasta makes an excellent signature pesto sauce.

Recipe – Pesto Mac & Feta with Fried Onions

Ingredients:

1 Cup Macaroni

2 Tbsp of La Pasta Pesto (play this one by ear, you might want more or less depending on your taste)

1 Cup of Feta (should you desire more feta, proceed)

1/8 Cup Heavy Cream

1/8 Cup Olive Oil

3 Tbsp Salt

3 or 4 cups Boiling Water

Method

Bring the water mixed with the salt to a boil (the water should taste salty, you can use less if you want), add your macaroni. After about 6 to 7 minutes, check to see if the macaroni is cooked. Once it’s done, strain it (save a little bit of the pasta water). Pour it back into your pot, (make sure it’s not on the burner anymore), then add your olive oil (mix), add your pesto ( mix) , add your cream (mix) and then finally the feta.

Top with some Fried Onions
