Sunny Side Caprese with Basil

The Caprese Salad, which means Salad of Capri, is a classic Italian salad. It’s simple, delicious, and relatively easy. Typically it has fresh mozzarella, tomatoes, and basil. It’s usually a starter to one’s meal when they are eating Italian food.

So I thought to myself, what if I brought the Caprese Salad to….wait for it….BREAKFAST. *Cue the dramatic music*

Honestly I think it’s a natural pairing. Who doesn’t love some delicious cheese in the morning?

This dish is a piece of cake and will satisfy your pickiest of eaters. Just do the following:

Make a Sunny Side Up Egg (with a runny yolk, overcooking eggs is the worst, but many including my lovely Fiancee prefer a dry egg).

Top your tomato with a piece of fresh mozzarella, then add the egg and finally top it with the basil. Why the egg on top of the cheese? The warm egg will slightly melt the cheese so you have a delicious gooey cheese underneath your egg.

Season it with some olive oil, salt, and pepper.

Enjoy!
