5 Days 5 Lunches: Apple Cheddar Pork Sausage Patties

5 Days 5 Lunches comes to you this week with a breakfast meat for lunch! I’m crossing over here!

Breakfast sausage is like the ugly redheaded stepchild of the sausage world. It gets no love. First off, it always plays second fiddle to bacon in the breakfast meat world. Then you enter the sausage world and between Italian Sausage, Brats, and whatever else you have, poor old breakfast sausage is no match.

This is part of my ongoing series that I do once a week to help you get through the work week with a healthy meal. I like to suggest a recipe that you can cook on a Sunday and pack for your lunch all week. This is a great way to save money and to eat well.

So how do we save poor old breakfast sausage?  Well my friends, you need to jazz breakfast sausage up. How do we do that? Let’s bring good old Mr. Cheese into the picture. I mix cheese, apples, and onions to really take the sausage patties to another level.

The green apples provide a nice sweet and tangy flavor to the sausage, meanwhile the leeks and cheese add a savory element to the sausage patties. Combined you have the SUPER SAUSAGE PATTY. These are perfect as a meal by itself or as a breakfast item.

Recipe

Ingredients

1lb of Loose Ground Pork Sausage

1 Green Apple Peeled and Diced

1/2 Cup of White Cheddar

1/4 Cup Diced Leeks

Method

Mix the pork sausage, diced apples, cheese, and leeks together. Form 2 inch diameter meatballs and then flatten them into patties. Start these patties in a cast iron pan and brown them. After about 10 minutes, move your sausage patties into the oven and bake them for another 15 minutes. The sausages should come out golden brown.

Enjoy with a nice piece of bread, an egg, or a veggie.

Ingredients
