5 Days 5 Lunches: Pan Seared Chicken Breast with Mushrooms

Pan Seared Chicken Breast

Pan seared chicken breast is an easy way to bring some flavor to our old boring friend, chicken breast. By pan searing the chicken breast, you can lock in some more flavors.

This dish is great for lunch, you can put it on a sandwich or eat it by itself.

This is a part of my lunch series, 5 Days 5 Lunches. Where I give you affordable dishes that save you money during the week.

Recipe

Ingredients

1 Chicken Breast

1/2 Diced Onion

1 Cup Whole White Mushrooms

2 Tsp. Salt

1 Tsp. Pepper

2 Tbsp. Olive Oil

3 Tbsp. White Wine

1 Tbsp. Butter

Method

*Make sure your pan can go in the oven*

Cut your chicken breast in the middle to make 2 thin chicken beasts. Now rub on the olive oil, salt, and pepper. Heat your pan with the butter.

As it begins to foam, add your chicken breasts. Brown each side, once both sides are browned (should take about 2 to 3 minutes each side).

Once they’ve browned on each side, remove them from the pan, add your mushrooms and onions. Let them brown and then add your cooking wine so the onions caramelize in the wine.

Now add your chicken breasts again to your pan, cover with aluminum foil and bake in the oven for 30 minutes at 350F.
