Smashed Potatoes & Eggs

Smashed Potato

Potatoes and Eggs are a famous pairing. Like Brangelina famous. Can you get more famous than Hash Browns & Eggs? What really goes better with potatoes than a delicious egg?

Maybe….cheese. JUST MAYBE!

But not when it’s done like this.

This is an insanely easy dish, and great on a night when you don’t feel like cooking. Just brush a potato with some olive oil and salt. Preheat your oven to 350, with one special caveat leave the pan you are going to bake the potatoes in, in the oven.

Once it’s ready, add the potatoes to the hot pan. Bake until the potato is soft all the way through. (Some golden brown crisping on the edges is a good sign). Remove from the oven. Now take a potato smasher press down on the potatoes so it smashes up real nice.

Brush it with some more olive oil and put it back in the oven so it crisps up.

Now make your egg, this is a standard egg. Grease your pan, crack the egg. Scramble the yolk slightly, only the yolk. Let the white stay. Cook the egg to about a medium. Now take your potato out of the oven, it should be golden brown and crispy. Top it with your egg.
