Sausage Glazed Green Beans

Green beans are such an underrated veggie. Theyhave a nice bit of Vitamin C in them along with some fiber and Vitamin A. To top it off, as a culinary vegetable, they don’t over power anything. Ergo, making them a great side veggie for any dish. In this case, I had some left over sausage grease and bits so rather than get rid of them, I decided to cook my green beans in them!

With Thanksgiving right around the corner, these are a perfect substitute if you do not feel like making green bean casserole.

Generally, it’s smart to pair some of your veggies with fat, because it helps the nutrients in the veggies absorb better in your system. Thanks, science! I didn’t need an excuse to add fat to my food, but if you say so! (Obviously within reason, folks. Don’t go mainlining olive oil like it’s freshman year of college)

These are so easy they don’t really require a recipe. Just clean and wash your green beans, then saute them with the sausage bits and grease. As they change color, add some white wine to deglaze your pan. Reduce the wine with the beans and serve as a great side or healthy snack!
