Imagine if I said you could buy the best cookie ever. Now imagine if I told you that cookie was a COOKIE SANDWICH! I was at the Columbia Whole Foods recently, and there was a sample table set up where the folks from Happy Girl Cookie Company had set up a table with samples.

I love me some samples. I loved their samples so much, I bought three of their cookies. I did not regret this. These cookies are entirely vegan and gluten free, which doesn’t really matter to me, but it matters to a lot of folks. These cookies are UNREAL. Like literally the best cookie I’ve ever had. They are soft and chewy with a delicious vanilla cream filling, it’s magic. I would recommend eating these cookies even if I was comparing them to a gluten non vegan cookie.

The Triple Chocolate Nirvana cookie sandwich is super chocolatey and delicious. The cream filling balances perfectly with the rest of the cookie and the deep chocolatey flavor makes this a rich magical experience. It kind of tastes like a Ho-Ho cookie and it’s perfect. A++

The Bodacious Banana Cream cookie sandwich was unreal. It’s like a banana bread cookie sandwich. The vanilla cream blends well with the mild natural banana flavor in the cookie. The touch of oatmeal in the cookie creates a perfect flavor for the cookie. Again A++ (noticing a trend?)

The last cookie we tried was the Oatmeal Chocolate Chip Cookie Heaven cookie sandwich. Again words cannot really describe how awesome this cookie was. It has some whole oats in there without having too strong a flavor. Between the chocolate chips, the chewy texture, and the wonderful vanilla cream you have an oatmeal pie on steroids. The good kind! Not the banning you from baseball kind! A++

Make sure you pair all of these delicious cookie sandwiches with some nice milk. A nice glass of milk pairs perfectly with these rich, decadent cookies.

So where can you find these perfect cookie sandwiches? I found them at my local Whole Foods. For those of you who don’t have access to one of these, I recommend you visit their website. Buy the sampler pack.
