Flattened Pork Chops with Thyme
Mmmmm Pork Chops. The words of the great poet laureate, Homer Simpson.
I love pork chops and I love thyme. So why not combine the two? Thyme accents meat perfectly and it goes really well with pork chops.
Thyme is fragrant and has a mild flavor which wont over power your meat. Pork chops work well with thyme and butter, then again what doesn’t?
So what the heck is a pork chop? It’s a cut of the pork that runs perpendicular to the spine that includes the rib. I personally like bone in pork chops better because they are juicier and have more flavor. Boneless pork chops are perfect for schnitzels or if you want to make a pork stir fry.
The key to this recipe is flattening it with a meat mallet. By flattening the pork chop with a meat mallet you will cook the pork faster and the meat is extra tender.
Recipe
Ingredients
1 Bone in Pork Chop
2 Tbsp. Butter
Fresh Thyme Leaves
Salt
Pepper
Garlic Powder
Olive Oil
Method
Flatten with a meat mallet, coat with olive oil, salt, pepper, and garlic. Melt butter in a large cast iron. As it begins to foam, add your fresh thyme leaves, and then your pork chop. Brown on each side, tossing the butter back on the butter as it cooks by tilting pan to let excess butter pool at the corner of the pan, which will allow you to scoop it onto the pork chop.
