Chorizo Casserole

First off, who doesn’t love a good casserole right? Future Mrs. Unmanly Chef calls most casseroles “Glorp” and probably for good reason, it’s just a mish mash of stuff. But I’ll fill you in on a little secret, I love me some glorp, and that’s why I love casserole. Because casserole is basically glorp. It’s a mish mash of tasty ingredients that work together to make a delicious meal. Now yes, it does not look pretty typically, but beauty is all in the eye of the beholder people!

Next, chorizo, what is it? Chorizo is a sausage originating from the Iberian Peninsula, it’s heavily spiced with paprika and other spices native to that region of Europe. With the Spanish invasion of the Americas you have the logical progression of chorizo across the Atlantic. Now chorizo can be found in a wide variety across Latin America. It’s pretty damn delicious, it has a tendency to be a little greasy so watch out for that.

This dish, Chorizo Casserole, is pretty simple and works well for dinner or as a lunch if you have leftovers. Using spaghetti squash instead of a grain like rice make this a pretty reasonable dish. Adding in some beans you have a dish that’s chockfull of fiber and protein, although it’s high in fat, so watch your portions.

Recipe- Chorizo Casserole

Ingredients

1 Spaghetti Squash

1 lb. of Loose Chorizo Sausage

1 cup of diced Onion

1 Can of Red Beans, drained of liquid. Or your preference of bean. (You can use dry beans also, just make sure they are fully cooked and drained of liquid)

1 Cup of Cheddar Cheese

1 Cup of Monterrey Jack Cheese

1 Jar of Salsa

Method

Roast your spaghetti squash and then scoop out the meat and set aside.

Saute the sausage with the onion. Once the sausage is cooked add your salsa to it and stir for about 2 minutes. Then add your beans. Stir for another 3 minutes.

Now in a pyrex dish, first layer your spaghetti squash. Then add your meat/bean mixture. Then layer on the cheese. Bake in the oven for 20 minutes  to 30 minutes.
