Strawberry Rhubarb is one of my favorite flavor combos. It’s like a party in your mouth, that everyone is invited to! (Special prize to the Simpson’s episode you can name).
It’s that time of year again where you get delicious strawberries and rhubarb stalks. So I wanted to make a combo of my two favorite things, Cobbler & Pie.
Cobbler Pie is a delicious combo of pie and the squishy goodness of a cobbler. Top it with an awesome crumble/biscuit topping and you got trouble on your hands.
Recipe
Ingredients
1 Package of Diced Strawberries (1 lb)
1 Rhubarb Stalk, Diced
1 Cup of Sugar
1/2 Cup of Brown Sugar
3 Tbsp. Corn Starch
2 Cups of Flour
1 Stick of Butter, softened
1 Tsp. Baking Soda
Pie Crust (Store Bought, sorry gang, not making this from scratch this time, I’m a crappy baker as it is, you want me to make a CRUST?!)
Method
Pre-heat your oven to 350F.
First mix your strawberries, rhubarb, 1/2 cup of sugar, 1/2 cup of brown sugar, and corn starch together.
Roll out your pie crust into a pie dish. Place your filling into the pie dish. Place your pie into the oven, without the top. Now mix your butter, the rest of your sugar, baking soda, and flour together. You are making almost like a biscuit topping.
As you mix it all together it should start to form a crumbly mixture. Form the mixture into balls and roll them out over the filling (after you have seen the filling turn a bright red). That should take about 20 minutes.
Lay the biscuit topping over the filling. Bake in the oven, the topping should turn a golden brown.
