Pureed Cauliflower

Cauliflower is so in right now. It’s being used for fake Pizza Crust, fake mashed potatoes, and all sorts of other fake carb treats. Cauliflower was always looked at like it was broccoli’s ugly stepsister. But now cauliflower has made a comeback and you could venture to say it’s even more popular than its green sibling.

Cauliflower is one of the oldest veggies around with records showing it was consumed as far back as 600 B.C. Ancient people be lovin some cauliflower! It’s full of nutrients such as fiber, folate, and vitamin C so every time you eat some you’re getting a very nutritious contribution to your diet.

The cauliflower puree is basically like mashed potatoes but with cauliflower. I’m going to warn you though, you can’t have the expectation that you are going to taste mashed potatoes. It can sort of satisfy the jones you have for mashed potatoes, but not all the way.

What this will do though is add another delicious side dish to your repertoire. I love serving this with a flavorful protein like a beef short rib.

Recipe – Cauliflower Puree

Ingredients

1 Head of Cauliflower

1 Tbsp. Butter

2 Tsp. Salt

1/4 Cup of Sour Cream

Method

Steam the Cauliflower (remove the leaves)

Once the cauliflower is cooked, throw the chunks into a food processor.

Once the cauliflower is pureed, add the rest of the ingredients. Stir together in a large bowl.

Serve with some cheese and enjoy!
