Baked Shrimp Gratin

This baked shrimp gratin was inspired by Jacque Pepin and his book Fast Food My Way. I came across it one Saturday night while I was looking for something new to make with shrimp. I always just think to sautee shrimp in olive oil and eat it that way. But this recipe quickly has become one of my new favorites.

Shrimp is a great high protein food that is low in fat. Whole Foods sells great frozen mini shrimp that you don’t have to worry about. It’s a relatively cheap option that works out great during the week when you don’t want the hassle of cleaning or peeling shrimp.

This baked shrimp gratin is fairly simple but so delicious. Baking shrimp allows you to build some more flavors into your shrimp while not having to worry about overcooking the shrimp as much. In this dish the panko crumbs and the green onions really balance well with the shrimp. Pair this with some pasta or some roasted potatoes.

 

Baked Shrimp Gratin

Recipe – Shrimp Gratin

Ingredients

1 Pound of Shrimp (peeled/deveined)

1/2 Cup of Parmesan Cheese

1 Cup of Panko Bread Crumbs

2 Tbsp. Butter

1 Cup of Diced Leeks or Green Onions

1 Clove of Garlic Minced

1 Cup of Diced Cremini Mushrooms

1/4 Cup of White Wine

Method

Heat half of the butter in a cast iron pan, as it begins to foam add your green onions, garlic, and mushrooms. Brown them together.

Mix together the other half of the butter, with the breadcrumbs, and the cheese. Set aside.

Deglaze your pan with the white wine and reduce, until you have a nice brown amber color to your mixture.

Now add your shrimp, fan them out into a circle.

Top the whole thing with your breadcrumb mixture. Bake in the oven for 20 minutes at 375F, serve when the crust is golden brown and the shrimp is cooked. Be careful not to overcook the shrimp.
