Thai Turkey Meatballs

Thai Meatball

A meatball is one of the more satisfying things you can eat.

Fun fact, meatballs are not really unique to any one region around the world. Almost every country or region has their own version of the meatball.

Persians have various kinds of meatballs from Koofteh Tabrizi to Gheymeh Rizeh, I always remember my Grandma making a pot of chickpea flour ground lamb meatballs and I would just down a bunch of them with a baguette.

ThisThai Turkey Meatball is an easy turkey meatball mixed in with Thai Curry paste. This gives the meatball a great flavor that bursts with a delicious lemongrass flavor. The ground turkey in the meatball makes this a guilt free dish that has a awesome flavor without having to worry about what it’s going to do to your waistline.

Recipe – Thai Turkey Meatball

Ingredients

1 Pound of Ground Turkey

2 Tbsp. of Masaman Curry Paste

2 Tbsp. PB-2 Peanut Butter Paste

1 Cup of Coconut Milk

2 Tbsp. Diced Lemongrass

1 Tbsp. Crushed Garlic

2 Tbsp. Shredded Onion

1/2 Cup Diced Onions

2 Tbsp. Coconut Oil

1 Cup Chicken Broth

Method

Mix 1 Tbsp. of the curry paste, the crushed garlic and shredded onion with the ground turkey.

Once the meatball is well mixed, form them into quarter sized balls.

Heat 1 tbsp. of coconut oil in a pan and brown your meatballs on each side.

Cover the meatballs with aluminum foil and bake in the oven at 325 for 15 minutes.

In a separate pan, heat the coconut oil then add your diced onions. Once they’ve browned, add 1 tbsp of your curry paste, and the diced lemongrass.

Saute them in your pan then add your powdered peanut butter. Make sure the peanut butter mixes well so you don’t have clumps (you can use regular peanut butter if you want)

From there add your chicken broth. Cook for about 10 minutes. Then transfer all of these ingredients to a blender and puree. Return these ingredients back to your pan/pot and then add your coconut milk. Slowly stir for about 10 minutes. Add your meatballs back to the sauce as well. Cook for about 10 minutes (make sure the meatballs are cooked).

Serve with some rice noodles and enjoy!
