In the deluge that is the post-Thanksgiving world. One is always faced with one dire question. What the hell am I supposed to do with all this left-over turkey! Fear not my friends; you have a food blogger on your side with ample ideas of how to turn excess turkey into delicious creations.
Before we jump right into how to make this ridiculously awesome dish let’s talk TURKEY shall we?
First some turkey factoids:
The turkey itself is as North American as it comes by being a native to the forests of North America.
Male turkeys are more colorful than female turkeys (obviously. Whichever gender is responsible for competing to mate with the other gender will have flashy characteristics to prove they are a healthy and viable candidate for re-pro-duction!
51 million turkeys are consumed each year for Thanksgiving. That’s like turkey genocide people.
Now that I’ve thoroughly bored you and quite possibly horrified you with our turkey factoids, we can talk about how to go about not wasting all that delicious turkey meat. By doing so you can make sure our turkey brethren and their miniscule brains did not die in vain.
The first obvious route for left-over turkey is to cover it with cheese and put a southwestern spin on it. So that’s what I did.
This dish literally came together so fast that before I could finish an episode of Homeland, it was already sitting inside my stomach.

Recipe
Ingredients
3 Cups of Leftover Turkey (or Chicken) Meat
1 Large Jar of Salsa (or two small jars)
5 Ounces of Shredded Monterrey & Colby Jack Cheese (mine came mixed in a bag so technically one ingredient for me!)
2 Tsp. Cumin
1 Tbsp. Garlic Powder
Method
Step 1: Add turkey (or chicken) to large baking dish
Step 2: Then add spices
Step 3: Then pour salsa over the turkey.
Step 4: Bake in the oven for 20 minutes at 350F.
Step 5: Spread cheese evenly over the entire dish, then return to oven to allow cheese to melt evenly.
Step 6: Once cheese has sufficiently melted, serve and enjoy!
