Cookie Butter Cookie Sandwich

At some point in the past, there was a moment in time where “cookie butter” did not really exist to the masses. Then the geniuses over at Trader Joe’s decided to take Speculoos cookies, which are Belgian cookies with a nice caramel crunch to them, and they blended them with some oil and VOILA! Cookie Butter was born (at least for some of us). But the Cookie Butter story goes much deeper than that.

These cookies are served around Christmas time and are very popular within Germany, Netherlands, and Belgium. They blend a variety of spices that are native to the region, but were most likely imported back to the region during the era of the Dutch spice trade. The speculoos cookie is important to Belgian heritage with variations of the cookie popping up in different towns across the country. The cookies gained a global appeal when they were marketed as Biscoff cookies on Delta Air Lines; it was on Delta Air Lines where the cookies were included on in-flight meals. (Over a 100 million cookies each year)

So we get it speculoos cookies are kind of a big deal over there, but WHY DO I CARE? Is what you’re asking yourself. I can’t really answer that, this is all really pointless in the grand scheme of things =). But anyways, in 2008 a Belgian woman on a reality TV show popularized cookie butter and she quickly had all sorts of suitors who were wanting to get in on the cookie butter trade. Quickly a legal battle ensued as companies were claiming they owned cookie butter and all the intellectual rights to them. Can you imagine going to court over cookies? #firstworldproblems

So now we get to today’s dish which is…COOKIE BUTTER COOKIE SANDWICHES! This is like the most meta of all posts ever. Think about it. A spread made from cookies, INSIDE TWO COOKIES, to make ONE SINGULAR COOKIE! It’s just nom nom nom nom nom

Anyways, the cookie sandwich has been a popular theme on my blog this past month and I explained why here.

This is a great fun cookie sandwich that has a very unique flavor. The rich buttery butterscotch taste of the cookie butter is the perfect compliment to the cookies. So strap in and get ready to eat a ton of these.

Recipe –Cookie Butter Cookie Sandwich

Method

3 cups of flour

1/2 Tsp. Baking Powder

1/2 Tsp. Salt

1 1/3 Cup of Sugar

2 Tsp. Vanilla

1 Cup of Cold Unsalted Butter

2 Eggs

Filling

1/4 Cup of Cookie Butter

Method

*Preheat oven to 350F*

Step 1 – Sift Flour, baking powder, and salt

Step 2- Beat cold butter with a standing mixer then slowly add sugar.

Step 3 – Now add the eggs one at a time.

Step 4- Add Vanilla, should have a almost shortbread like consistency.

Step 5- Form the dough into a disc or ball and then refrigerate for at least an hour.

Step 6 – Roll out the dough in portions (probably about 4 portions). Roll-out should be about 1/4 inch thick.

Step 7 – Use a cookie cutter if possible, to make 2 1/2 inch wide circles.

Step 8 – Place on parchment paper and then on a baking sheet.

Step 9 – Bake in oven for 9 minutes or just so bottoms are a little bit brown.

Step 10 – Remove cookies from oven, allow to cool, then spread cookie butter (probably only a teaspoon at most) on cookie and form a sandwich!

Ingredients
