Okay I PROMISE, this is my last sugar cookie based recipe for a long time. I just can’t help it, look how pretty these damn things look! Don’t you just want to inhale a bunch of them?
To me orange flavored pastries/cookies are often executed poorly, mostly due to the fact that folks use too much orange extract. The end result is something that’s way too pungent and doesn’t have any of that pleasant mild orange flavor.
But when done well, the orange flavored dessert is divine and highly addictive. So what’s the trick? Simple use fresh orange zest and mix into your cookie batter and a tasty creation will follow shortly.
This cookie would serve as an excellent base for some sort of vanilla cream filling to make a creamsicle cookie sandwich, but that’s for another day. Until then, enjoy these and try not to eat too many at once you can avoid the diabetes.
Method
3 cups of flour
1/2 Tsp. Baking Powder
1/2 Tsp. Salt
1 1/3 Cup of Sugar
2 Tsp. Vanilla
1 Cup of Cold Unsalted Butter
2 Eggs
1 Tbsp. Orange Zest
Method
*Preheat oven to 350F*
Step 1 – Sift Flour, baking powder, and salt
Step 2- Beat cold butter with a standing mixer then slowly add sugar.
Step 3 – Now add the eggs one at a time.
Step 4- Add Vanilla, and then the dry ingredients including the orange zest. It should have a almost shortbread like consistency.
Step 5- Form the dough into a disc or ball and then refrigerate for at least an hour.
Step 6 – Roll out the dough in portions (probably about 4 portions). Roll-out should be about 1/4 inch thick.
Step 7 – Use a cookie cutter if possible, to make 2 1/2 inch wide circles.
Step 8 – Place on parchment paper and then on a baking sheet.
Step 9 – Bake in oven for 9 minutes or just so bottoms are a little bit brown.
Step 10 – Remove cookies from oven, allow to cool
