Vegan and Gluten Free.
Two words that you will not often hear come out of my mouth when talking about anything I cook. I don’t have anything against either one of these, being a Vegan is cool…I…guess? And gluten free is generally caused by someone having a physical intolerance to bread or gluten, so I can understand that.
But I choose to eat meat because it’s really delicious and I can eat gluten, so I win.
Choosing not to adhere to either of these tenets doesn’t mean that sometimes you just stumble in the kitchen and make something that is vegan and gluten free anyways. That’s what happened to me a couple of weeks ago. I had a large amount of almond butter given to me, I know #firstworldproblems, and I didn’t know what to do with it. Almond butter in lieu of peanut butter on bread, just doesn’t do it for me.
So I figured why not freeze the almond butter and cover it with chocolate?! Because let’s face it, everything is tastier when covered with chocolate.
That’s pretty much how I came up with this dish, it’s one of my favorite desserts to make when I’m feeling lazy. It’s also really satisfying and not the worst thing you can eat if you’re jonesing for a treat. I mixed in some delicious Mouth Party Caramel sauce to elevate this from a 9 to a 10. I suggest you do the same.
These bites will keep for a few weeks in the freezer, but let’s be real they won’t last but a few days in your house. They didn’t in mine.
Chocolate Covered Almond Butter Bites – Vegan & Gluten Free
Ingredients
1 Cup of Almond Butter
2 Tbsp. Caramel Sauce
1 Cup of Semi Sweet Chocolate Chips
2 Tsp. Sea Salt
Method
Step 1 – Mix almond butter and caramel sauce together (add more caramel sauce if it’s not sweet enough for your taste)
Step 2- Freeze almond butter mix in a square silicone baking mold tray. (Allow to freeze up to 3 hours)
Step 3- Melt chocolate chips in a water bath (put chocolate in a metal bowl, then immerse bowl in hot water, stir as it melts)
Step 4- Remove almond butter from freezer, place squares on piece of parchment paper.
Step 5- Cover with melted chocolate
Step 6- Sprinkle sea salt.
Step 7 – Freeze up to 3 hours then serve.
