Riddle me this.

What tastes and smells like sour cream and onion chips without any of the weird flavoring?

Dried Green Onion Stems. THAT’S What!

If you’re a green onion lover like me, that’s music to your ears. Green onion stems are often discarded because people don’t know what to do with them. And just a public service announcement before we get going, green onions and scallions are the same thing. Spring onions are different, so watch out!

Green onions or scallions are all apart of the onion or Allium family, they’re an ancient veggie that’s been cultivated for thousands of years.

Onions in Persian food are essential, and green onions are at every Persian dinner table when there is sabzi khordan which are fresh herbs (Fresh herbs are served with every meal if you’re doing Persian food right). Typically you’ll take a bite of a green onion and eat some with your food, and you’ll go on your merry way with stinky breath. It’s supposed to aid with digestion and to add some extra nutrition to your food, if you haven’t already noticed Persians are nutso for healthy eating or at least the illusion of healthy eating.

So being a lover of green onions and being Persian, there are always green onions in my kitchen. They impart a great unique flavor on your food, but unless you’re making a koo koo you don’t need the green stems too often.

Recently I discovered a way how to dry herbs in the microwave, I have a dehydrator but it can be a pain in the ass to use sometimes. Drying green onion stems seemed like a perfect solution, and the end results were incredible. This green onion spice is ridiculously easy to do and you end up with a secret weapon at your disposal in your spice pantry. The flavor and aroma is incredible, it smells just like sour cream and onion chips.

Recipe – Green Onion Spice

1 Handful of Washed/Cleaned Green Onion Stems

Paper Towels

A Microwave Safe Plate

Method

Step 1 – Wrap the green onions in the paper towels and microwave on high for about 5 minutes.

Step 2- At the 2 minute mark, check on the onions, see if they are moist and soggy. If the paper towel gets too soggy, replace them with new ones.

Step 3- Continue until green onions are crunchy, remove from the microwave, allow to cool and then place in a ziplock bag.

Step 4- Crush up the stems until it’s a fine powder and store in a air tight container. Should keep for at least a month.
