Dijon Grilled Chicken

Look when summer hits, everyone wants an excuse to grill. But grilling can be a basic affair, with hot dogs and burgers, and while no one is slighting those foods (actually I am) sometimes you want something different. Something more nuanced, I give you this chicken breast.

*Pause for Laughter*

No seriously, the chicken breast is an incredibly underrated grilled meat option, most of the time the problem is people just screw it up. How? Simple, they overcook it and they leave it too chunky. The beauty of chicken breast is in its low fat content, because of that it cooks very fast. The trick to cooking it fast is cutting the chicken in half and then pounding it so you have a thin cutlet almost. This allows for more delicious surface area and you can cook it in less than 10 minutes on the grill (or stove top). The end result is a juicy chicken breast cutlet that is the perfect vessel for any flavor you want.

Dijon mustard is a delightful companion for the chicken breast, think of Dijon mustard as that friend who’s way too cool for school, only dates French dudes/girls, doesn’t own a T.V.,  and started smoking cigarettes in high school (this does not condone smoking, it is in fact gross). What I’m trying to say is Dijon mustard is a complicated and nuanced condiment that has a variety of flavors built into it. That’s why it’s the perfect pairing for a chicken breast.

Recipe – Dijon Grilled Chicken Breast

Ingredients

1 1/2 tablespoon extra-virgin olive oil
1 Spring of Rosemary (to taste)
1 teaspoon fine sea salt
1/4 teaspoon ground black pepper
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 tablespoon finely chopped fresh chives.
2 Chicken Breast cut horizontally

Method

Step 1- Dice the rosemary and mix it with everything but the chicken breast.
Step 2- Flatten your chicken breast with a mallet.
Step 3- Marinate the chicken in the sauce made in step 1. 1 hour max.
Step 4- Heat your grill, grease your grates, and make sure your grill is hot.
Step 5- Apply your chicken breasts, watch out for flare ups due to the olive oil in the marinade, I would advise a hot and cold side for your grill.
Step 6- Cook about 5 minutes a side max, cook till internal step reads 165F.
