Dijon Mustard Chicken Bowl

Everybody loves a good chicken bowl, it’s practically guilt free, it tastes great, and it’s easy to assemble. It’s the perfect delivery system for the balanced meal, you have a nice protein, complex carbohydrate, and some healthy fats to go with it. This chicken bowl is no different, I used a Dijon mustard marinade to give the chicken a great earthy flavor while maintaining the moisture in the chicken breast which is wont to dry out. If you’re trying to figure out a good work lunch idea, this is ideal. It keeps all week and you can swap out the other components of the bowl to keep your interest all week.

Rather than regale you with tales of yore about the magical history of chicken breasts and the transformative properties of chicken bowls, I’ll get right to the recipe.

Recipe – Dijon Mustard Chicken Bowl
Ingredients –
1/2 Cup of Cooked Farro or Brown Rice
1/2 Cup Baked Sweet Potatoes
3 Slices of Avocado
1 8oz Boneless Skinless Chicken Breast
2 Tbsp. Olive oil
2 Tsp. Dijon Mustard
1 Tsp. Lemon Juice
1/2 Tsp. Sage
1/2 Tsp. Salt
1/2 Tsp. Pepper
Method
Step 1- Mix 1 tbsp. olive oil, mustard, lemon juice, sage, salt, and pepper together.
Step 2- Place chicken breast in a bowl and marinate with ingredients from step 1, approx 2 hrs.
Step 3- In a medium sized saute pan, heat 1 tbsp. olive oil, once it begins to shimmer, add chicken breast.
Step 4- Cook until each side is golden brown, check internal temp, finish in oven if need be until internal temperature reaches adequate level.
Step 5- Once chicken is cooked, dice and assemble other bowl ingredients together however you see fit, do you really need directions on how to make your plate? Live your best life and do what you want!
