Bacon Marinated Smoked Chicken Legs

Bacon Marinated Smoked Chicken Legs

This recipe is not for the health conscious or the faint of heart.

 I fired up the smoker this past Labor Day weekend and grabbed a bunch of random ingredients from around the house.

This is one of our tastiest creations yet! Two delicious things crammed together in an amazing standalone entrée, bacon and BBQ chicken.

Recipe

Ingredients:

6 chicken legs

¼ cup strained bacon grease (Yes, you read that correctly. You could always cook the Unmanly Chef’s bacon and egg salad sandwich first!)

½ cup BBQ spice or Cajun spice blend

2 tablespoons salt

1 cup BBQ sauce of your choice (I am from Oklahoma so I am picky. Try Head Country Original Bar-B-Q Sauce

Method

  1. Heat your smoker to 200 degrees. You can use an indirect heating method if you are using a grill. You will want your smoker/grill rolling with heat before you put the chicken inside.

  2. Amply rub each chicken leg down with the bacon grease. Don’t be afraid to use your hands!

  3. While rubbing, coat the chicken leg with the BBQ seasoning. Don’t be afraid to over season.

  4. Lightly season with salt unless your BBQ seasoning already contains salt. In that case, omit the extra salt. If you are unsure, taste the BBQ seasoning before using it. If it tastes salty then you probably shouldn’t add extra.

  5. Place the chicken in the smoker/grill.

  6. Keep the temperature around 200 – 225 degrees

  7. Flip the legs after 2 hours.

  8. Cook for another 2 hours.

  9. Brush the BBQ sauce on each side of each leg and allow them to cook for another 30 minutes.

  10. Pull the chicken legs from the grill and brace yourself for the awesomeness which is about to ensue.
